- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups old-fashioned oats
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to the wet ingredients and mix until combined.
- Stir in oats, chocolate chips, coconut, and nuts (if using).
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until edges are golden and centers are set.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra chewiness, slightly underbake the cookies and let them finish on the baking sheet.
- Store in an airtight container for up to 5 days or freeze for longer storage.
