Ingredients

Units Scale

For the Cups:

  • 1/2 cup (120 g) natural peanut butter (smooth or crunchy)
  • 1 ripe banana, mashed
  • 1 tablespoon honey or maple syrup (optional, for extra sweetness)
  • 1 teaspoon vanilla extract

For the Chocolate Layer:

  • 1 cup (175 g) dark chocolate chips or chopped chocolate
  • 1 teaspoon coconut oil (optional, for a smoother texture)

For Topping (Optional):

  • Crushed peanuts
  • Sea salt flakes
  • Banana chips

Instructions

  1. Mix Peanut Butter and Banana:
    • In a bowl, combine the peanut butter, mashed banana, honey (if using), and vanilla extract. Mix until smooth and well combined.

Melt the Chocolate:

  1. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring after each interval, until smooth. Alternatively, melt over a double boiler.

Assemble the Cups:

  1. Layer the Chocolate:
    • Line a muffin tin with 8–10 paper liners. Add 1–2 teaspoons of melted chocolate to the bottom of each liner and spread evenly. Place the tin in the freezer for 5–10 minutes to set.
  2. Add the Filling:
    • Scoop about 1–2 teaspoons of the peanut butter banana mixture into each liner, spreading it gently over the chocolate layer.
  3. Top with Chocolate:
    • Cover the filling with another 1–2 teaspoons of melted chocolate, ensuring the filling is fully covered.
  4. Decorate (Optional):
    • Sprinkle crushed peanuts, sea salt, or banana chips on top for added texture and flavor.

Chill and Serve:

  1. Set the Cups:
    • Place the muffin tin in the refrigerator or freezer for 20–30 minutes, or until the cups are firm.
  2. Serve:
      • Remove the cups from the liners and enjoy chilled. Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.@edsxwn;

Notes

  • Nut-Free Option: Substitute peanut butter with sunflower seed butter.
  • Sweetness: Adjust the sweetness by adding or omitting honey/maple syrup based on your preference.
  • Chocolate Variety: Use milk or white chocolate if you prefer a milder flavor.
