- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup heavy cream (plus extra for brushing)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen peaches, diced
- Coarse sugar for topping (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a small bowl, whisk together cream, egg, and vanilla. Add to the flour mixture and stir until just combined.
- Gently fold in the diced peaches.
- Turn dough out onto a lightly floured surface and pat into a 1-inch thick circle. Cut into 8 wedges and transfer to the baking sheet.
- Brush tops with cream and sprinkle with coarse sugar if using.
- Bake for 18–22 minutes or until golden brown. Let cool slightly before serving.
Notes
- Use frozen peaches without thawing to prevent overly wet dough.
- Add a glaze of powdered sugar and milk for extra sweetness.
- Scones are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
