Description

Peach Scones are tender, buttery pastries filled with juicy peach chunks and a hint of vanilla—perfect for breakfast, brunch, or a sweet afternoon treat.


Ingredients

  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup heavy cream (plus extra for brushing)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen peaches, diced
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together cream, egg, and vanilla. Add to the flour mixture and stir until just combined.
  5. Gently fold in the diced peaches.
  6. Turn dough out onto a lightly floured surface and pat into a 1-inch thick circle. Cut into 8 wedges and transfer to the baking sheet.
  7. Brush tops with cream and sprinkle with coarse sugar if using.
  8. Bake for 18–22 minutes or until golden brown. Let cool slightly before serving.

Notes

  • Use frozen peaches without thawing to prevent overly wet dough.
  • Add a glaze of powdered sugar and milk for extra sweetness.
  • Scones are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
