Description

Peach Pie Bars are a delicious dessert with a buttery shortbread crust, sweet peach filling, and a crumbly topping. They’re perfect for summer gatherings, potlucks, or an easy make-ahead treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 1/2 cups diced fresh or canned peaches (drained)
  • 1 tbsp cornstarch
  • 1/4 cup granulated sugar (for filling)
  • 1/2 tsp cinnamon
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it well.
  2. In a large bowl, cream together butter, 1/2 cup sugar, 1/4 cup brown sugar, and vanilla until light and fluffy.
  3. Mix in flour and salt until crumbly dough forms.
  4. Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
  5. In a separate bowl, mix peaches with cornstarch, 1/4 cup sugar, cinnamon, and lemon juice.
  6. Spread the peach filling evenly over the crust.
  7. Crumble the remaining dough over the top of the peaches.
  8. Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
  9. Let cool completely before cutting into bars. Serve warm or at room temperature.

Notes

  • Fresh peaches are best, but well-drained canned or thawed frozen peaches work too.
  • Chill bars before slicing for cleaner cuts.
  • Add a drizzle of vanilla glaze or serve with ice cream for extra indulgence.
