- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 2 1/2 cups diced fresh or canned peaches (drained)
- 1 tbsp cornstarch
- 1/4 cup granulated sugar (for filling)
- 1/2 tsp cinnamon
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it well.
- In a large bowl, cream together butter, 1/2 cup sugar, 1/4 cup brown sugar, and vanilla until light and fluffy.
- Mix in flour and salt until crumbly dough forms.
- Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
- In a separate bowl, mix peaches with cornstarch, 1/4 cup sugar, cinnamon, and lemon juice.
- Spread the peach filling evenly over the crust.
- Crumble the remaining dough over the top of the peaches.
- Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
- Let cool completely before cutting into bars. Serve warm or at room temperature.
Notes
- Fresh peaches are best, but well-drained canned or thawed frozen peaches work too.
- Chill bars before slicing for cleaner cuts.
- Add a drizzle of vanilla glaze or serve with ice cream for extra indulgence.
