This peach honey Dijon vinaigrette is bright, tangy, and a little sweet with the richness of balsamic vinegar and the subtle bite of Dijon mustard. Fresh peaches give it a smooth, summery vibe—perfect over mixed greens, grilled chicken, or even roasted veggies.
Ingredients

1 ripe peach, peeled and diced (or 1/2 cup peach purée)

2 tbsp honey

2 tbsp Dijon mustard

2 tbsp balsamic vinegar

2 tbsp extra-virgin olive oil

1 small clove garlic, minced

1/4 tsp salt

1/8 tsp black pepper

1-2 tsp water (optional, to thin)
Instructions

Blend the base:
In a blender or food processor, combine peach, honey, Dijon mustard, balsamic vinegar, olive oil, and garlic. Blend until completely smooth. -
Season:
Add salt and pepper. Blend again and taste. Adjust sweetness (more honey) or tang (more vinegar) as needed. -
Thin if needed:
If the dressing is too thick, add a splash of water and blend again until desired consistency is reached. -
Store:
Pour into a jar or container with a lid. Keep refrigerated for up to 1 week. Shake well before each use.
