Description

This peach honey Dijon vinaigrette is bright, tangy, and a little sweet with the richness of balsamic vinegar and the subtle bite of Dijon mustard. Fresh peaches give it a smooth, summery vibe—perfect over mixed greens, grilled chicken, or even roasted veggies.


Ingredients

  • 1 ripe peach, peeled and diced (or 1/2 cup peach purée)

  • 2 tbsp honey

  • 2 tbsp Dijon mustard

  • 2 tbsp balsamic vinegar

  • 2 tbsp extra-virgin olive oil

  • 1 small clove garlic, minced

  • 1/4 tsp salt

  • 1/8 tsp black pepper

  • 1-2 tsp water (optional, to thin)


Instructions

  1. Blend the base:
    In a blender or food processor, combine peach, honey, Dijon mustard, balsamic vinegar, olive oil, and garlic. Blend until completely smooth.

  2. Season:
    Add salt and pepper. Blend again and taste. Adjust sweetness (more honey) or tang (more vinegar) as needed.

  3. Thin if needed:
    If the dressing is too thick, add a splash of water and blend again until desired consistency is reached.

  4. Store:
    Pour into a jar or container with a lid. Keep refrigerated for up to 1 week. Shake well before each use.


Notes

  • Use white balsamic vinegar for a lighter color and milder taste.

  • No fresh peach? Use frozen (thawed) or high-quality peach preserves.

  • Add a pinch of fresh thyme or basil for an herby touch.
