Description

Patriotic Meringue Cookies are light, airy, and crisp treats swirled with red, white, and blue colors—perfect for 4th of July celebrations and summer parties. These melt-in-your-mouth cookies are naturally gluten-free and low in fat.


Ingredients

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract
  • Red and blue gel food coloring

Instructions

  1. Preheat oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat egg whites and cream of tartar on medium speed until soft peaks form.
  3. Gradually add sugar, one tablespoon at a time, while continuing to beat until stiff, glossy peaks form.
  4. Beat in vanilla extract.
  5. Divide the meringue into three portions if desired—leave one white, and tint the other two with red and blue gel food coloring.
  6. To create swirls, spoon colored meringue into a piping bag side-by-side or layer them in stripes in the bag.
  7. Pipe small swirls or kisses onto the prepared baking sheet.
  8. Bake for 1 hour, then turn off the oven and let meringues sit inside for another hour to dry out completely.
  9. Once cool and crisp, store in an airtight container at room temperature.

  • Ensure no yolk gets into the egg whites or they won’t whip properly.
  • Humidity can affect the texture—make these on a dry day if possible.
