- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1/4 tsp cream of tartar
- 1/2 tsp vanilla extract
- Red and blue gel food coloring
Instructions
- Preheat oven to 200°F (93°C) and line a baking sheet with parchment paper.
- In a clean, dry bowl, beat egg whites and cream of tartar on medium speed until soft peaks form.
- Gradually add sugar, one tablespoon at a time, while continuing to beat until stiff, glossy peaks form.
- Beat in vanilla extract.
- Divide the meringue into three portions if desired—leave one white, and tint the other two with red and blue gel food coloring.
- To create swirls, spoon colored meringue into a piping bag side-by-side or layer them in stripes in the bag.
- Pipe small swirls or kisses onto the prepared baking sheet.
- Bake for 1 hour, then turn off the oven and let meringues sit inside for another hour to dry out completely.
- Once cool and crisp, store in an airtight container at room temperature.
Notes
- Ensure no yolk gets into the egg whites or they won’t whip properly.
- Humidity can affect the texture—make these on a dry day if possible.
- Use gel food coloring for vibrant hues without altering the texture.
