Party Potatoes, also known as funeral potatoes, are a creamy, cheesy hash brown casserole topped with a buttery, crunchy topping — the ultimate crowd-pleasing comfort food side dish.

- 1 (30 oz) bag frozen shredded hash browns, thawed
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup unsalted butter, melted (divided)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 cups cornflakes, crushed
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix together hash browns, cream of chicken soup, sour cream, cheddar cheese, chopped onion, 1/4 cup melted butter, garlic powder, salt, and pepper.
- Spread the mixture evenly in the prepared baking dish.
- In a separate bowl, combine crushed cornflakes with the remaining 1/4 cup melted butter. Sprinkle evenly over the casserole.
- Bake for 45–50 minutes, or until hot and bubbly with a golden topping.
- Let cool slightly before serving.
Notes
- You can substitute cream of mushroom soup for a vegetarian version.
- Top with chopped parsley or green onions for added color.
- Can be made ahead and refrigerated, then baked before serving.
