- 2 lbs baby potatoes or Yukon Gold potatoes, cut into bite-sized pieces
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary (or thyme)
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, rosemary, paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-35 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Remove from oven and garnish with chopped fresh parsley if desired. Serve hot.

- Cut potatoes into uniform sizes for even cooking.
- Use parchment paper to prevent sticking and for easier cleanup.
