- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon dried rosemary or thyme (optional)
- Butter, sour cream, chives, or toppings of choice (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Scrub the potatoes thoroughly and pat them dry with a towel.
- Prick each potato a few times with a fork.
- Rub each potato with olive oil and season with salt, pepper, and optional spices.
- Wrap each potato tightly in aluminum foil.
- Place the foil-wrapped potatoes directly on the oven rack or on a baking sheet.
- Bake for 45-60 minutes, or until a fork easily pierces through the potato.
- Carefully remove from oven and let rest for a few minutes before unwrapping.
- Serve with your favorite toppings such as butter, sour cream, shredded cheese, or chives.

- Use Yukon gold or sweet potatoes as a variation.
- Foil helps retain moisture for a softer skin; for crispier skin, unwrap during the last 10 minutes of baking.
