Description
Oreo Cheesecake Bites are rich, creamy mini cheesecakes made with a whole Oreo cookie base, smooth cream cheese filling, and crushed Oreos mixed in for a perfect bite-sized dessert.

- 18 Oreo cookies (12 whole for base, 6 crushed for filling)
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 275°F (135°C). Line a muffin tin with 12 cupcake liners and place one whole Oreo at the bottom of each liner.
- In a large bowl, beat cream cheese until smooth and creamy.
- Add sugar and mix until combined.
- Beat in eggs one at a time, scraping down the sides of the bowl as needed.
- Add sour cream, vanilla extract, and salt, mixing until smooth.
- Fold in the crushed Oreos gently.
- Spoon the cheesecake mixture evenly over the Oreo bases in the liners.
- Bake for 22–25 minutes, until centers are set but still slightly jiggly.
- Let cool in the pan, then chill in the refrigerator for at least 2 hours before serving.
Notes
- Top with whipped cream and mini Oreos for extra presentation.
- Store in the refrigerator for up to 5 days or freeze for longer storage.
- Use a food processor to crush Oreos evenly for the filling.
