- 1 cup mashed ripe bananas (about 2-3 bananas)
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tbsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional)
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
- Mix in the egg, mashed bananas, and vanilla extract until well combined.
- Stir in flour, baking powder, salt, and cinnamon (if using) until just combined.
- Fold in white chocolate chips, if using.
- Pour batter into prepared pan and spread evenly.
- Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out with moist crumbs.
- Cool completely in the pan before slicing into bars.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- Bars will firm up as they cool—don’t overbake if you want them gooey.
- Try adding chopped walnuts or pecans for a crunchy twist.
