Description

A hearty and flavorful one-pot meal featuring smoked sausage, rice, and vegetables, perfect for a quick and satisfying dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same pot, add diced onion and bell pepper. Sauté for 3-4 minutes until softened.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Stir in the rice, chicken broth, diced tomatoes (with juices), paprika, oregano, salt, and pepper.
  6. Return the sausage to the pot and stir to combine.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and liquid is absorbed.
  8. Remove from heat and let sit for 5 minutes before fluffing with a fork.
  9. Garnish with chopped parsley and serve warm.

Notes

  • You can use turkey or chicken sausage for a lighter version.
  • Add a pinch of cayenne or red pepper flakes for extra heat.
  • Brown rice can be used but will require a longer cooking time and more liquid.
