- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
- In the same pot, add diced onion and bell pepper. Sauté for 3-4 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in the rice, chicken broth, diced tomatoes (with juices), paprika, oregano, salt, and pepper.
- Return the sausage to the pot and stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and liquid is absorbed.
- Remove from heat and let sit for 5 minutes before fluffing with a fork.
- Garnish with chopped parsley and serve warm.
Notes
- You can use turkey or chicken sausage for a lighter version.
- Add a pinch of cayenne or red pepper flakes for extra heat.
- Brown rice can be used but will require a longer cooking time and more liquid.
