For the pasta:
- 1 tbsp olive oil
- 1 lb (450g) ground beef or Italian sausage
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 1 can (28 oz/800g) crushed tomatoes
- 3 cups (720ml) chicken or beef broth
- 2 tbsp tomato paste
- 8 oz (225g) uncooked lasagna noodles, broken into pieces
- Salt and pepper, to taste
For the cheese topping:
- 1 cup (250g) ricotta cheese
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (50g) grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Cook the meat:
- Heat olive oil in a large pot or deep skillet over medium heat. Add ground beef or sausage and cook until browned, breaking it into small pieces with a spoon. Drain any excess fat.
- Sauté the aromatics:
- Add the onion and cook for 3-4 minutes, until softened. Stir in garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute, or until fragrant.
- Build the sauce:
- Stir in the crushed tomatoes, broth, and tomato paste. Bring the mixture to a simmer.
- Cook the pasta:
- Add the broken lasagna noodles to the pot. Stir to submerge the noodles in the sauce. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened. Adjust seasoning with salt and pepper.
- Add the cheese topping:
- Spoon dollops of ricotta cheese over the pasta. Sprinkle with mozzarella and Parmesan cheeses. Cover the pot and cook for 2-3 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with fresh parsley and serve warm. Pair with a green salad or garlic bread for a complete meal.

- For added veggies, stir in a handful of spinach or diced zucchini during the last 5 minutes of cooking.
