- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes
- 3 cups chicken broth
- 8 oz penne or your favorite pasta
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach (optional)
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with Italian seasoning, salt, and pepper. Add to the pot and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
- In the same pot, sauté garlic, onion, and bell pepper for 3–4 minutes until softened.
- Add diced tomatoes, chicken broth, and uncooked pasta. Stir to combine and bring to a boil.
- Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is al dente.
- Stir in cooked chicken, heavy cream, and Parmesan cheese. Simmer for 2–3 more minutes until the sauce thickens slightly.
- Add baby spinach (if using) and cook until wilted.
- Garnish with fresh basil or parsley and serve warm.
Notes
- You can substitute the chicken with Italian sausage for a different flavor profile.
- Use whole wheat or gluten-free pasta to suit dietary preferences.
- This dish can be made dairy-free by omitting cream and cheese or using plant-based alternatives.
