For the Chicken:

For the Orzo & Sauce:
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 1/2 cups orzo pasta
- 2 1/2 cups chicken broth
- 1/2 cup heavy cream (or half-and-half)
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional, for heat)
- 1 cup fresh spinach (optional)
- 1 tbsp lemon juice (for freshness)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Chicken
- Season the chicken pieces with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 5–6 minutes, until golden brown and cooked through. Remove and set aside.
Step 2: Sauté the Aromatics & Toast the Orzo
- In the same skillet, melt butter and sauté garlic and onion for 2 minutes, until fragrant.
- Add orzo pasta and stir for 1–2 minutes, toasting slightly.
Step 3: Simmer the Orzo
- Pour in chicken broth and Italian seasoning, stirring to combine.
- Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
Step 4: Finish the Dish
- Stir in heavy cream, Parmesan cheese, red pepper flakes (if using), and spinach.
- Add the cooked chicken back into the skillet and mix well.
- Squeeze in lemon juice and stir to combine.
Step 5: Garnish & Serve
- Remove from heat and sprinkle with fresh parsley and extra Parmesan.
- Serve warm and enjoy!
