- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups chicken broth (low sodium)
- 1 1/2 cups heavy cream (or half-and-half)
- 8 ounces fettuccine or penne pasta (uncooked)
- 1 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp butter
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the Chicken:
- Heat olive oil in a large, deep skillet or pot over medium-high heat.
- Add chicken pieces, season with salt, pepper, and Italian seasoning.
- Cook for 5-7 minutes, until chicken is golden and cooked through.
- Remove chicken from the pot and set aside.
- Sauté Garlic:
- In the same pot, add butter and minced garlic.
- Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add Liquids and Pasta:
- Pour in chicken broth and heavy cream, stirring well.
- Bring to a simmer over medium heat.
- Cook the Pasta:
- Add the uncooked pasta to the pot.
- Stir to ensure pasta is submerged in the liquid.
- Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
- Add Chicken and Cheese:
- Return the cooked chicken to the pot.
- Stir in Parmesan cheese until melted and the sauce is creamy.
- Add more broth or cream if the sauce is too thick.
- Serve:
- Garnish with fresh parsley and a sprinkle of extra Parmesan if desired.
- Serve immediately and enjoy!
Notes
- Use Freshly Grated Cheese: Pre-shredded cheese may not melt as smoothly.
- For Extra Veggies: Add spinach, peas, or broccoli when adding the chicken back into the pot.
- Storage: Store leftovers in the fridge for up to 3 days. Reheat gently with a splash of milk or broth.
