Description

This One Pot Cheesy Smoked Sausage Pasta Skillet is the ultimate comfort food! It’s a quick and easy dinner that’s packed with smoky sausage, tender pasta, and melty cheese—all made in just one pan. Perfect for busy weeknights when you need something delicious with minimal cleanup.


Ingredients

  • 1 tablespoon olive oil

  • 14 oz smoked sausage, sliced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups chicken broth

  • 1 cup milk

  • 8 oz dry pasta (penne or rotini work great)

  • 1 (10 oz) can diced tomatoes with green chilies, undrained

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 1/2 cups shredded cheddar cheese

 

  • 2 green onions, sliced (optional for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add sliced smoked sausage and cook until browned, about 3–4 minutes.

  3. Stir in diced onion and cook until softened, about 2 minutes.

  4. Add garlic and sauté for 30 seconds, until fragrant.

  5. Pour in chicken broth, milk, dry pasta, diced tomatoes with chilies, paprika, salt, and pepper. Stir to combine.

  6. Bring to a gentle boil, then reduce heat, cover, and simmer for 12–15 minutes, or until the pasta is cooked through.

  7. Remove the lid and stir in shredded cheddar cheese until melted and creamy.

  8. Let sit for a couple of minutes to thicken.

  9. Garnish with green onions if desired and serve hot.


Notes

  • You can use any type of smoked sausage (turkey, beef, or pork).

  • Add a pinch of red pepper flakes if you like a bit of heat.

  • Monterey Jack or a Mexican cheese blend can be used instead of cheddar.
