Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 lb (450 g) Italian sausage, casings removed
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 1/2 cups heavy cream (or half-and-half for a lighter option)
  • 2 cups uncooked penne pasta
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and pepper, to taste
  • 4 cups fresh spinach leaves
  • 1 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the Sausage: In a large, deep skillet or sauté pan, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through (about 5-6 minutes). Remove any excess grease if needed.
  2. Add Onion and Garlic: Add the chopped onion to the pan with the sausage and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another 1 minute until fragrant.
  3. Add Broth, Cream, and Pasta: Pour in the chicken broth and heavy cream. Add the penne pasta and stir to combine. Season with red pepper flakes, salt, and pepper. Bring the mixture to a gentle simmer.
  4. Cook the Pasta: Cover the pan and let the pasta cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened. Adjust the heat as necessary to maintain a gentle simmer.
  5. Add Spinach and Parmesan: Once the pasta is cooked, add the fresh spinach and stir until wilted. Add the Parmesan cheese, stirring until melted and the sauce is creamy.
  6. Serve: Garnish with fresh basil or parsley, and serve warm. Enjoy your delicious, one-pan creamy penne!

Notes

  • For extra creaminess, add an additional 1/4 cup of cream or cheese at the end.
  • Substitute with turkey sausage or chicken sausage for a leaner option.
