Units
Scale
- 3 lbs (1.4 kg) pork loin
- 1 can (12 oz/355 ml) Coca-Cola (not diet)
- 1/2 cup (120 ml) ketchup
- 1/4 cup (60 ml) soy sauce
- 1/4 cup (60 g) brown sugar
- 2 tablespoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil (for searing)
Instructions
- Prepare the Pork Loin:
Pat the pork loin dry with paper towels. Season it all over with salt, black pepper, and smoked paprika. - Sear the Pork:
Heat the vegetable oil in a large skillet over medium-high heat. Sear the pork loin on all sides until browned, about 2–3 minutes per side. Transfer the pork loin to a roasting pan or baking dish. - Make the Sauce:
In a medium bowl, whisk together the Coca-Cola, ketchup, soy sauce, brown sugar, Worcestershire sauce, Dijon mustard, garlic, and onion powder. - Cook the Pork Loin:
Pour half of the Coca-Cola sauce over the pork loin in the roasting pan, reserving the other half for glazing. Cover the pan with aluminum foil. - Bake:
Preheat your oven to 350°F (175°C). Bake the pork loin for 45 minutes, basting every 15 minutes with the sauce from the pan. - Glaze and Finish:
After 45 minutes, remove the foil. Pour the reserved Coca-Cola sauce over the pork and increase the oven temperature to 400°F (200°C). Continue baking for an additional 20–25 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and the glaze is caramelized. - Rest and Serve:
Remove the pork loin from the oven and let it rest for 10 minutes before slicing. Serve with the pan juices drizzled over the top.
Notes
- For extra flavor, marinate the pork loin in the Coca-Cola sauce for 4–6 hours before cooking.
- Pair with Southern sides like mashed potatoes, collard greens, or cornbread for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
