Description

Chewy and golden oatmeal cookie bars packed with brown sugar flavor and a hint of cinnamon — easy to make and perfect for snacking or dessert.


Ingredients

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 1/2 cups old-fashioned oats
  • Optional: 1 cup chocolate chips or raisins

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients, stirring until just combined.
  5. Fold in oats and optional chocolate chips or raisins.
  6. Spread the dough evenly in the prepared pan and smooth the top.
  7. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Cool completely in the pan before slicing into bars.

Notes

  • For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend.
  • Customize with nuts, dried fruits, or different chocolate varieties.
