Scale
- 3 cups all-purpose flour
- 1/4 teaspoon instant yeast
- 1 1/4 teaspoons salt
- 1 1/2 cups warm water
Instructions
- In a large bowl, whisk together flour, yeast, and salt.
- Add warm water and stir until a shaggy dough forms. No kneading required.
- Cover bowl with plastic wrap or a towel and let sit at room temperature for 12–18 hours.
- After rising, the dough should be bubbly and doubled in size. Turn it out onto a well-floured surface and shape it into a ball. Let rest for 30 minutes.
- While dough rests, preheat oven to 450°F (230°C) and place a Dutch oven (with lid) inside to heat for at least 30 minutes.
- Carefully place dough into the hot Dutch oven. Cover and bake for 30 minutes.
- Remove lid and bake for an additional 15–20 minutes until golden brown and crusty.
- Let cool on a wire rack before slicing and serving.
Notes
- Use parchment paper to easily transfer dough to the hot Dutch oven.
- Try mixing in herbs, cheese, or olives for variation.
- Store leftovers wrapped in a clean towel or paper bag to preserve the crust.
