  • 1/4 cup chopped nuts (optional, e.g., almonds or walnuts)

Instructions

  • Prepare the Pan:
    • Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
  • Mix Wet Ingredients:
    • In a medium microwave-safe bowl, combine peanut butter and honey.
    • Microwave for 30–60 seconds, stirring every 15 seconds, until the mixture is smooth and slightly warm.
    • Stir in the vanilla extract.
  • Combine Oats and Mixture:
    • In a large bowl, mix the oats with the warm peanut butter and honey mixture until evenly coated.
    • If using, fold in chocolate chips and nuts.
  • Press into Pan:
    • Transfer the mixture to the prepared baking dish. Press down firmly with the back of a spoon or your hands to create an even layer.
