- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1 1/2 cups old-fashioned oats
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup ground flaxseeds (or chia seeds)
- 2 tablespoons mini chocolate chips (optional)
- 2 tablespoons chopped nuts (pecans or walnuts, optional)
Instructions
- Mix Ingredients: In a large bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
- Add Dry Ingredients: Mix in the oats, pumpkin pie spice, cinnamon, salt, flaxseeds, and any optional mix-ins like chocolate chips or nuts.
- Chill the Mixture: Cover the bowl and refrigerate for at least 30 minutes to help the mixture firm up.
- Form Balls: Use a small cookie scoop or your hands to roll the mixture into 1-inch balls.
- Store & Enjoy: Store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
Notes
- For extra protein, add 1-2 tablespoons of protein powder.
- If the mixture is too sticky, add a bit more oats; if too dry, add a little extra nut butter.
- Try rolling the energy balls in shredded coconut or crushed nuts for extra texture.
