Description

This No-Bake Funfetti Oreo Icebox Cake is a colorful and delicious dessert featuring layers of whipped cream, Funfetti cake mix, and Oreo cookies. It’s an easy, make-ahead treat perfect for birthdays, celebrations, or anytime you need a no-fuss dessert!

  • 1 package (14.3 oz) Golden Oreos (or Birthday Cake Oreos)
  • 1 1/2 cups (180g) Funfetti cake mix, dry (do not prepare as a batter)
  • 2 cups (480ml) heavy whipping cream
  • 1/2 cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup (40g) sprinkles (plus extra for garnish)

Instructions

  • Prepare the Whipped Cream Mixture:

    • In a large mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
    • Add the dry Funfetti cake mix to the whipped cream and gently fold until combined. The mixture should be thick and creamy.
  • Layer the Cake:

    • Spread a thin layer of the Funfetti whipped cream mixture on the bottom of a 9×9-inch baking dish.
    • Place a single layer of Golden Oreos on top of the whipped cream layer.
    • Spread another layer of Funfetti whipped cream over the cookies and sprinkle with a layer of sprinkles.
  • Repeat Layers:

    • Continue layering the Oreos and Funfetti whipped cream until you reach the top of the dish, finishing with a layer of whipped cream on top. Add more sprinkles on top for decoration.
  • Chill:

    • Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set and the cookies to soften.
  • Serve:

    • Slice and serve cold. Garnish with extra sprinkles, if desired.
