Description
These No-Bake Cheesecake Parfaits are made with layers of smooth cheesecake mousse, graham cracker crumbs, and sweet cherry pie filling. They’re quick to prepare, no oven needed, and great for individual servings!

For the Cheesecake Layer:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, cold
For the Crust Layer:
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 1 tablespoon sugar
For the Topping:
- 1 can (21 oz) cherry pie filling
- Whipped cream (optional)
- Crushed graham crackers or white chocolate shavings (for garnish)
Instructions
Make the Crust Layer:
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Divide the mixture evenly among 4-6 serving glasses, pressing slightly to form a crust layer.
Make the Cheesecake Layer:
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fluffy.
Assemble the Parfaits:
- Spoon or pipe a layer of cheesecake mixture over the graham cracker crumbs.
- Add a generous layer of cherry pie filling on top.
- Repeat layers if desired, finishing with cherry pie filling.
Chill & Serve:
- Refrigerate for at least 30 minutes before serving.
- Garnish with whipped cream, crushed graham crackers, or white chocolate shavings before serving.
Notes
- Want a crunchier crust? Toast the graham cracker crumbs in a pan for 3 minutes before assembling.
- Make it lighter: Use Greek yogurt instead of some of the cream cheese.
- Storage: Keep in the fridge for up to 2 days.
