For the truffles:
- 1 1/2 cups (200 g) Biscoff cookies, crushed into fine crumbs
- 4 oz (115 g) cream cheese, softened
- 2 tablespoons Biscoff cookie butter
For the coating:
- 8 oz (225 g) white or milk chocolate, melted
- 1/4 cup (40 g) crushed Biscoff cookies (for garnish)
Instructions
1. Make the truffle filling
- In a medium mixing bowl, combine the crushed Biscoff cookies, cream cheese, and Biscoff cookie butter. Mix until smooth and well combined.
- Cover the mixture and refrigerate for at least 30 minutes to firm up.
2. Shape the truffles
- Scoop tablespoon-sized portions of the mixture and roll them into balls.
- Place the balls on a parchment-lined baking sheet and refrigerate for another 15–20 minutes until firm.
3. Coat the truffles
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth.
- Using a fork or skewer, dip each truffle into the melted chocolate, ensuring it’s fully coated. Tap off any excess chocolate.
- Place the coated truffles back onto the parchment-lined baking sheet.
4. Garnish and set
- While the chocolate coating is still wet, sprinkle the truffles with crushed Biscoff cookies for garnish.
- Allow the chocolate to set at room temperature or place the truffles in the refrigerator for quicker setting.
5. Serve and enjoy
- Transfer the truffles to a serving platter or package them in decorative boxes for gifting.
Notes
- Storage: Store in an airtight container in the refrigerator for up to 1 week.
- Freezing: Freeze truffles (before coating) for up to 2 months. Thaw and coat with chocolate before serving.
