Description

These No-Bake Biscoff Cookie Truffles are indulgent bite-sized treats with a creamy Biscoff cookie center coated in a smooth chocolate shell. Perfect for parties, holidays, or as a quick dessert, they’re a delightful way to enjoy the rich, spiced flavor of Biscoff cookies.

For the truffles:

  • 1 1/2 cups (200 g) Biscoff cookies, crushed into fine crumbs
  • 4 oz (115 g) cream cheese, softened
  • 2 tablespoons Biscoff cookie butter

For the coating:

  • 8 oz (225 g) white or milk chocolate, melted
  • 1/4 cup (40 g) crushed Biscoff cookies (for garnish)



Instructions

1. Make the truffle filling

  1. In a medium mixing bowl, combine the crushed Biscoff cookies, cream cheese, and Biscoff cookie butter. Mix until smooth and well combined.
  2. Cover the mixture and refrigerate for at least 30 minutes to firm up.

2. Shape the truffles

  1. Scoop tablespoon-sized portions of the mixture and roll them into balls.
  2. Place the balls on a parchment-lined baking sheet and refrigerate for another 15–20 minutes until firm.

3. Coat the truffles

  1. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth.
  2. Using a fork or skewer, dip each truffle into the melted chocolate, ensuring it’s fully coated. Tap off any excess chocolate.
  3. Place the coated truffles back onto the parchment-lined baking sheet.

4. Garnish and set

  1. While the chocolate coating is still wet, sprinkle the truffles with crushed Biscoff cookies for garnish.
  2. Allow the chocolate to set at room temperature or place the truffles in the refrigerator for quicker setting.

5. Serve and enjoy

  • Transfer the truffles to a serving platter or package them in decorative boxes for gifting.

Notes

  • Storage: Store in an airtight container in the refrigerator for up to 1 week.
  • Freezing: Freeze truffles (before coating) for up to 2 months. Thaw and coat with chocolate before serving.
