    • 3/4 cup (90 g) powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup (240 ml) heavy whipping cream, whipped to stiff peaks
  • For the monster cookie topping:
    • 1/4 cup (45 g) mini chocolate chips
    • 1/4 cup (45 g) mini M&Ms
    • 1/4 cup (20 g) rolled oats (optional)
    • 2 tablespoons peanut butter, melted (optional drizzle)

Instructions

  1. Prepare the crust:
    • In a medium bowl, mix the crushed cookies or graham crackers with sugar and melted butter until the mixture resembles wet sand.
    • Press the mixture evenly into the bottom and sides of a 9-inch pie dish. Chill in the refrigerator for at least 30 minutes to set.
  2. Make the cheesecake filling:
    • In a large mixing bowl, beat the cream cheese and peanut butter until smooth and creamy.
    • Add the powdered sugar and vanilla extract, and mix until fully combined.
    • Gently fold in the whipped cream until the mixture is light and fluffy.
  3. Assemble the pie:
    • Spoon the peanut butter cheesecake filling into the chilled crust and smooth the top with a spatula.
  4. Add the monster cookie topping:
    • Sprinkle the mini chocolate chips, M&Ms, and oats evenly over the top of the pie. Drizzle melted peanut butter over the toppings if desired.
  5. Chill:
    • Refrigerate the pie for at least 4 hours, or until the filling is firm and set.
