Description

Mom’s Butter Baked Chicken is a classic comfort food dish that’s rich, flavorful, and incredibly easy to make. Tender chicken thighs are coated in a seasoned breading, then baked in a buttery sauce until golden and juicy. This recipe is perfect for family dinners and pairs beautifully with mashed potatoes or roasted vegetables.

Ingredients

Scale

6 bone-in, skin-on chicken thighs (about 2 lbs) 1 cup all-purpose flour 1 tsp salt 1 tsp black pepper 1 tsp paprika 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp cayenne pepper (optional, for a bit of heat) 1/2 cup unsalted butter, melted 1 cup chicken broth

Instructions

Preheat the oven to 375°F (190°C). Prepare the breading: In a shallow bowl, mix together the flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper. Coat the chicken: Pat the chicken thighs dry with paper towels. Dredge each piece in the seasoned flour mixture, ensuring even coating on all sides. Shake off excess. Arrange in the baking dish: Place the chicken thighs skin-side up in a single layer in a 9×13-inch baking dish. Add the butter and broth: Pour the melted butter over the chicken, then add the chicken broth to the baking dish, avoiding pouring it directly on the chicken. Bake: Place the dish in the oven and bake for 50-60 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). Baste the chicken with the buttery sauce halfway through cooking for extra flavor. Serve: Remove the dish from the oven and let the chicken rest for 5 minutes before serving. Spoon some of the buttery sauce over the chicken for added richness.

Notes

For crispier skin, broil the chicken for the last 2-3 minutes of baking. This recipe works well with chicken drumsticks or boneless thighs, though cooking times may vary.
