1 cup heavy whipping cream

2 tablespoons powdered sugar

Instructions
-
Make the crust: Preheat oven to 350°F (177°C). Mix cookie crumbs and melted butter in a bowl. Press into the bottom and slightly up the sides of a 9-inch pie dish or springform pan. Bake for 8–10 minutes, then let cool.
-
Make the brownie layer: In a saucepan, melt butter over medium heat. Remove from heat and whisk in sugar, eggs, and vanilla. Stir in cocoa powder, flour, and salt. Pour the batter over the cooled crust and bake for 20–25 minutes or until set. Cool completely.
-
Make the pudding: In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Slowly whisk in milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble. Remove from heat and stir in chocolate and vanilla until melted and smooth. Cool slightly, then spread over the brownie layer. Chill for at least 2 hours.
-
Make the whipped cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form. Spread over the chilled pie.
-
Garnish with chocolate shavings or cookie crumbs if desired. Keep chilled until ready to serve.
Notes
-
For extra indulgence, add chopped pecans or walnuts to the brownie batter.
-
This pie tastes even better the next day—just store it covered in the fridge.
-
You can make this in a springform pan for clean, tall slices.
