Serves 12-16:
- For the cake:
- 1 box (15.25 oz / 432 g) chocolate cake mix (plus ingredients listed on the box: eggs, oil, water)
- 1 teaspoon mint extract (optional, for enhanced flavor)
- For the filling:
- 1 package (3.4 oz / 96 g) instant chocolate pudding mix
- 2 cups (480 ml) milk
- 1/2 teaspoon mint extract
- Green food coloring (optional, for a festive touch)
- For the topping:
- 1 container (8 oz / 227 g) whipped topping (e.g., Cool Whip), thawed
- 1/2 cup (90 g) mini chocolate chips or chocolate shavings
- Crushed mint candies or Andes mints (optional)
Instructions
- Prepare the cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- Prepare the cake mix according to the package instructions. Stir in the mint extract if using.
- Bake as directed on the box, then allow the cake to cool for 10-15 minutes.
- Poke the cake:
- Using the handle of a wooden spoon or a large straw, poke holes evenly across the entire surface of the cake, about 1 inch apart.
- Prepare the filling:
- In a medium bowl, whisk together the chocolate pudding mix, milk, mint extract, and a few drops of green food coloring (if desired) until smooth and thickened.
- Fill the cake:
- Pour the pudding mixture over the cake, spreading it evenly so it seeps into the holes. Gently tap the pan on the counter to help the filling settle into the cake. Cover and refrigerate for at least 2 hours to allow the pudding to set.
- Add the topping:
- Spread the whipped topping evenly over the chilled cake. Sprinkle with mini chocolate chips, chocolate shavings, or crushed mints for garnish.
- Serve and enjoy:
- Slice the cake into squares and serve chilled. Store any leftovers in the refrigerator.
Notes
- For extra minty flavor, replace half the milk in the pudding with crème de menthe liqueur (if suitable for your audience).
- Add a drizzle of chocolate syrup or hot fudge on top for an extra indulgent touch.
- This recipe works well with homemade chocolate cake if you prefer to make it from scratch.
