These Mini Kentucky Sawdust Pie Delights are rich, chewy mini pies filled with a decadent mix of coconut, pecans, graham crackers, and chocolate chips, all baked in a buttery crust. Inspired by the famous Kentucky sawdust pie, these individual versions are perfect for parties, potlucks, or cozy family desserts!
Ingredients
For the Mini Pie Crusts:

1 sheet refrigerated pie crust (or homemade)

Flour, for dusting

12-cup muffin tin, greased
For the Filling:

3 large egg whites

1 1/2 cups granulated sugar

1/2 cup crushed graham crackers (about 4 sheets)

1/2 cup sweetened shredded coconut

1/2 cup chopped pecans

1/2 cup mini semi-sweet chocolate chips

1/4 cup unsalted butter, melted

1 tsp vanilla extract

Pinch of salt

Instructions
1. Prepare the Crust:

Preheat oven to 350°F (175°C).

Roll out pie crust on a floured surface and cut into 12 circles using a cookie cutter or glass (about 3.5 inches wide).

Press each circle into the muffin tin to form mini pie shells. Chill in the fridge while you make the filling.
2. Make the Filling:

In a large bowl, whisk egg whites until frothy.

Add sugar, melted butter, vanilla, and salt. Mix well.

Stir in crushed graham crackers, coconut, pecans, and chocolate chips until evenly combined.
3. Fill and Bake:

Spoon filling evenly into the chilled mini pie shells (they’ll be full!).

Bake for 22–25 minutes, or until tops are golden and set.

Cool in the tin for 10 minutes, then carefully remove and transfer to a wire rack.
4. Serve:

Serve warm or at room temperature.
