Description

These Mini Kentucky Sawdust Pie Delights are rich, chewy mini pies filled with a decadent mix of coconut, pecans, graham crackers, and chocolate chips, all baked in a buttery crust. Inspired by the famous Kentucky sawdust pie, these individual versions are perfect for parties, potlucks, or cozy family desserts!


Ingredients

For the Mini Pie Crusts:

  • 1 sheet refrigerated pie crust (or homemade)

  • Flour, for dusting

  • 12-cup muffin tin, greased

For the Filling:

  • 3 large egg whites

  • 1 1/2 cups granulated sugar

  • 1/2 cup crushed graham crackers (about 4 sheets)

  • 1/2 cup sweetened shredded coconut

  • 1/2 cup chopped pecans

  • 1/2 cup mini semi-sweet chocolate chips

  • 1/4 cup unsalted butter, melted

  • 1 tsp vanilla extract

  • Pinch of salt

Optional Toppings:

  • Whipped cream

  • Sliced bananas

  • Caramel drizzle

  • Extra chopped pecans or chocolate chips


Instructions

1. Prepare the Crust:

  • Preheat oven to 350°F (175°C).

  • Roll out pie crust on a floured surface and cut into 12 circles using a cookie cutter or glass (about 3.5 inches wide).

  • Press each circle into the muffin tin to form mini pie shells. Chill in the fridge while you make the filling.

2. Make the Filling:

  • In a large bowl, whisk egg whites until frothy.

  • Add sugar, melted butter, vanilla, and salt. Mix well.

  • Stir in crushed graham crackers, coconut, pecans, and chocolate chips until evenly combined.

3. Fill and Bake:

  • Spoon filling evenly into the chilled mini pie shells (they’ll be full!).

  • Bake for 22–25 minutes, or until tops are golden and set.

  • Cool in the tin for 10 minutes, then carefully remove and transfer to a wire rack.

4. Serve:

 

  • Serve warm or at room temperature.

  • Top with whipped cream, banana slices, caramel drizzle, or a sprinkle of extra pecans for the full Kentucky pie experience!


Notes

  • These store well in an airtight container at room temperature for 2–3 days.

  • You can use mini phyllo shells or pre-made tart shells for an easy shortcut.

  • Add a dash of bourbon to the filling for a true Kentucky flair.
