For the Crust:
- 1 premade pie crust (or homemade)
- 1 tablespoon flour (for dusting)
For the Apple Filling:
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
For the Streusel Topping:
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tablespoons unsalted butter, melted
- 1/4 teaspoon cinnamon
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- Cut the crust – Roll out the pie crust on a lightly floured surface. Use a 3-inch round cutter (or glass) to cut out circles. Press each circle into the muffin tin to form mini pie shells.
- Make the apple filling – In a bowl, mix diced apples, granulated sugar, brown sugar, cinnamon, lemon juice, and cornstarch. Let sit for 5 minutes.
- Prepare the streusel topping – In a separate bowl, mix flour, brown sugar, cinnamon, and melted butter until crumbly.
- Assemble the pies – Spoon apple filling into each crust. Top with streusel.
- Bake for 18-22 minutes, or until golden brown and bubbling.
- Cool & serve – Let cool for 10 minutes before removing from the tin. Serve warm with ice cream!
