Ingredients

Scale
  • 4 cups cooked, shredded chicken (use rotisserie chicken for convenience)
  • 4 oz cream cheese, softened
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley (optional for added flavor)
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 6 tablespoons unsalted butter, melted
  • Chopped green onions or parsley for garnish (optional)

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a 2-quart casserole dish.
  • Prepare the Filling:

    • In a large bowl, mix together the cream cheese, cottage cheese, sour cream, and cream of chicken soup until smooth.
    • Add in the onion powder, garlic powder, and dried parsley. Stir in the shredded cheddar cheese and shredded chicken until everything is well combined.
  • Assemble the Casserole:

    • Pour the chicken mixture into the prepared baking dish and spread it evenly.
  • Make the Topping:

    • In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  • Bake:

    • Bake, uncovered, for 30-40 minutes or until the casserole is bubbly and the topping is golden brown.
  • Garnish and Serve:

    • Allow the casserole to cool for about 10 minutes before serving. Garnish with chopped green onions or parsley, if desired.

Notes

  • Variations: Add crispy bacon crumbles or diced jalapeños for extra flavor. You can also use cream of mushroom soup instead of cream of chicken for a different taste.
  • Make Ahead: Prepare the casserole (without the cracker topping) and refrigerate overnight. Add the topping just before baking.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F until warmed through.
