- 1/2 cup unsalted butter
- 1/2 cup light corn syrup
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
Instructions
- Line an 8×8-inch baking dish with parchment paper and lightly grease it.
- In a large microwave-safe bowl, combine butter, corn syrup, brown sugar, granulated sugar, and sweetened condensed milk.
- Microwave on high for 6 minutes, stirring every 2 minutes. Use oven mitts and be cautious as the mixture gets hot.
- After 6 minutes, stir in the vanilla extract.
- Pour the caramel into the prepared baking dish and let cool at room temperature for 2–3 hours or until firm.
- Once set, lift out the caramel, cut into small squares, and wrap in wax paper if desired.
Notes
- Microwave times may vary based on wattage; use caution and adjust as needed.
- To test firmness, drop a bit of hot caramel into cold water — it should form a soft ball.
- Store caramels in an airtight container at room temperature for up to 2 weeks.
