Description

Mexican Coleslaw is a vibrant and zesty slaw made with shredded cabbage, carrots, and a lime-cilantro dressing—perfect as a refreshing side dish or taco topping.


Ingredients

  • 1 cup shredded red cabbage (optional for color)
  • 1 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine green cabbage, red cabbage (if using), carrots, and cilantro.
  2. In a small bowl, whisk together mayonnaise, lime juice, vinegar, cumin, chili powder, salt, and pepper until smooth.
  3. Pour the dressing over the slaw mixture and toss until evenly coated.
  4. Chill for 15–30 minutes before serving to let flavors meld.

Notes

  • Add thinly sliced jalapeños for extra heat.
