Description

A hearty and flavorful Mexican Casserole packed with seasoned beef, beans, corn, salsa, and plenty of melty cheese, layered together for an easy and comforting meal the whole family will love.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup salsa
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6 small flour or corn tortillas, cut into halves
  • Fresh cilantro, sour cream, and sliced jalapeños for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onion is softened. Drain excess fat.
  3. Stir in black beans, corn, salsa, diced tomatoes, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  4. In the prepared baking dish, layer half of the tortillas to cover the bottom.
  5. Spread half of the beef mixture over the tortillas and sprinkle with 1 cup of cheese.
  6. Repeat with remaining tortillas, beef mixture, and cheese.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and slightly golden.
  8. Let the casserole cool for 5 minutes before serving. Top with cilantro, sour cream, and jalapeños if desired.

Notes

  • Substitute ground turkey or chicken for a lighter version.
  • Add a layer of refried beans for extra creaminess.
  • Customize with your favorite vegetables like bell peppers or zucchini.
