Description

A vibrant and crunchy Mexican-inspired slaw made with cabbage, carrots, and fresh herbs, tossed in a zesty lime dressing — perfect as a side dish or taco topping.


Ingredients

  • 4 cups green cabbage, thinly sliced
  • 2 cups red cabbage, thinly sliced
  • 1 large carrot, julienned or shredded
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely diced (optional)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine green cabbage, red cabbage, carrot, red onion, cilantro, and jalapeño.
  2. In a small bowl, whisk together lime juice, olive oil, apple cider vinegar, cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the slaw and toss well to coat evenly.
  4. Let the slaw sit for at least 15 minutes before serving to allow flavors to meld. Chill in the fridge if desired.

Notes

  • This slaw is excellent on tacos, burritos, or as a refreshing side dish.
  • Make ahead and refrigerate for up to 2 days — it gets even better as it sits.
  • Add diced mango or avocado for a fruity twist.
