- 4 cups green cabbage, thinly sliced
- 2 cups red cabbage, thinly sliced
- 1 large carrot, julienned or shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, finely diced (optional)
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine green cabbage, red cabbage, carrot, red onion, cilantro, and jalapeño.
- In a small bowl, whisk together lime juice, olive oil, apple cider vinegar, cumin, chili powder, salt, and pepper.
- Pour the dressing over the slaw and toss well to coat evenly.
- Let the slaw sit for at least 15 minutes before serving to allow flavors to meld. Chill in the fridge if desired.
Notes
- This slaw is excellent on tacos, burritos, or as a refreshing side dish.
- Make ahead and refrigerate for up to 2 days — it gets even better as it sits.
- Add diced mango or avocado for a fruity twist.
