Description

These Mediterranean Chicken Patties are juicy, flavorful, and filled with fresh herbs, feta cheese, and sun-dried tomatoes. Perfectly pan-seared, these patties can be served in pita bread, over salads, or as a main dish with a side of tzatziki sauce.


Ingredients

  • 1 lb ground chicken (or ground turkey)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, finely chopped (oil-packed, drained)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1/4 cup breadcrumbs (panko or regular)
  • 2 tablespoons olive oil (for cooking)

Optional for Serving:

 

  • Tzatziki sauce
  • Pita bread or buns
  • Fresh greens and sliced cucumbers
  • Cherry tomatoes and red onion slices

Instructions

  1. Mix the Ingredients:
    In a large bowl, combine ground chicken, feta cheese, sun-dried tomatoes, red onion, parsley, dill, garlic powder, oregano, salt, and pepper. Add the egg and breadcrumbs and mix until just combined.

  2. Form the Patties:
    Divide the mixture into 6-8 equal portions and shape them into patties, about 1/2-inch thick. If the mixture is too sticky, wet your hands lightly with water.

  3. Preheat the Pan:
    Heat olive oil in a large skillet over medium heat.

  4. Cook the Patties:
    Add the chicken patties to the skillet. Cook for 4-5 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C). Avoid overcrowding the pan; cook in batches if necessary.

  5. Serve:
    Serve the patties warm with a drizzle of tzatziki sauce. They are delicious in pita bread with fresh veggies or over a salad for a lighter meal.


Notes

  • For extra moisture, add 1 tablespoon of Greek yogurt to the mixture.
  • These patties can also be baked at 400°F (200°C) for 15-18 minutes or grilled for a smoky flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
