Zesty and herb-infused Mediterranean-style marinade that tenderizes chicken with bright lemon, garlic, olive oil, and aromatic herbs—perfect for grilled, roasted, or pan-seared chicken.

- 1/4 cup extra-virgin olive oil
- 3 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp Dijon mustard
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- Optional: 1 tsp lemon zest, 1/4 tsp red pepper flakes
Instructions
- Whisk together olive oil, lemon juice, garlic, oregano, thyme, mustard, salt, pepper, and optional spices in a bowl.
- Place 1 lb chicken pieces in a resealable bag or shallow dish and pour marinade over them.
- Seal or cover and marinate in the fridge for at least 30 minutes, up to 24 hours.
- Remove chicken from marinade and cook on a grill or skillet until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes before serving.
Notes
- Use fresh herbs if available for more flavor.
- Do not reuse marinade unless it’s been boiled.
- Add yogurt for a creamy marinade variation.
- Works great for shrimp, tofu, or vegetables too.
- Longer marinating times deepen flavor but avoid over-marinating beyond 24 hours.
