Description

Zesty and herb-infused Mediterranean-style marinade that tenderizes chicken with bright lemon, garlic, olive oil, and aromatic herbs—perfect for grilled, roasted, or pan-seared chicken.


Ingredients

  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp Dijon mustard
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • Optional: 1 tsp lemon zest, 1/4 tsp red pepper flakes

Instructions

  1. Whisk together olive oil, lemon juice, garlic, oregano, thyme, mustard, salt, pepper, and optional spices in a bowl.
  2. Place 1 lb chicken pieces in a resealable bag or shallow dish and pour marinade over them.
  3. Seal or cover and marinate in the fridge for at least 30 minutes, up to 24 hours.
  4. Remove chicken from marinade and cook on a grill or skillet until internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes before serving.

Notes

  • Use fresh herbs if available for more flavor.
  • Do not reuse marinade unless it’s been boiled.
  • Add yogurt for a creamy marinade variation.
  • Works great for shrimp, tofu, or vegetables too.
  • Longer marinating times deepen flavor but avoid over-marinating beyond 24 hours.
