Description

This Matilda’s Chocolate Cake is rich, moist, and ultra-decadent, just like the iconic cake from the movie Matilda! Made with dark chocolate, cocoa powder, and a luscious chocolate ganache frosting, this is the ultimate chocolate lover’s dream—perfect for birthdays, celebrations, or whenever you need an indulgent treat!

Ingredients

Scale

For the Chocolate Cake:

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder (high-quality for the best flavor!)
  • 2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup whole milk (or buttermilk for extra moisture!)
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water (or hot coffee for deeper chocolate flavor!)

For the Chocolate Ganache Frosting:

  • 2 cups semi-sweet or dark chocolate chips
  • 1 cup heavy cream (or coconut cream for dairy-free!)
  • 2 tbsp unsalted butter (optional, for extra shine!)
  • 1 tsp vanilla extract

Instructions

Step 1: Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add milk, oil, eggs, and vanilla extract, then mix until well combined.
  4. Stir in boiling water (or coffee)—the batter will be thin, but that’s normal!

Step 2: Bake the Cake

  1. Divide the batter evenly between the cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 3: Make the Chocolate Ganache Frosting

  1. In a heatproof bowl, add chocolate chips and butter.
  2. Heat heavy cream until steaming (but not boiling), then pour over the chocolate.
  3. Let sit for 2-3 minutes, then stir until smooth and glossy.
  4. Stir in vanilla extract and let cool until thickened but still spreadable. (Speed this up by refrigerating for 15-20 minutes, stirring occasionally!)

Step 4: Assemble the Cake

  1. Place one cake layer on a plate and spread with a thick layer of ganache.
  2. Place the second cake layer on top and cover the entire cake with the remaining ganache.
  3. Smooth with a spatula and let set for 15-30 minutes before slicing.

Step 5: Serve & Enjoy!

  1. Slice into big, Matilda-style pieces!
  2. Serve with a glass of cold milk or vanilla ice cream for the ultimate indulgence.

Serving Suggestions

  • Extra Fancy: Decorate with chocolate shavings or sprinkles.
  • Nutty Twist: Add chopped hazelnuts or pecans to the frosting.
  • Ultimate Indulgence: Serve warm with hot fudge drizzle!

Notes

  • Want it extra moist? Substitute ½ cup sour cream for part of the milk.
  • Make it dairy-free! Use almond milk + coconut oil in the cake, and coconut cream in the ganache.
  • More chocolate? Stir ½ cup chocolate chips into the cake batter!
