For the Chocolate Cake:
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder (high-quality for the best flavor!)
- 2 cups granulated sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup whole milk (or buttermilk for extra moisture!)
- 1/2 cup vegetable oil or melted butter
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water (or hot coffee for deeper chocolate flavor!)
For the Chocolate Ganache Frosting:
- 2 cups semi-sweet or dark chocolate chips
- 1 cup heavy cream (or coconut cream for dairy-free!)
- 2 tbsp unsalted butter (optional, for extra shine!)
- 1 tsp vanilla extract
Instructions
Step 1: Prepare the Cake Batter
- Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add milk, oil, eggs, and vanilla extract, then mix until well combined.
- Stir in boiling water (or coffee)—the batter will be thin, but that’s normal!
Step 2: Bake the Cake
- Divide the batter evenly between the cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 3: Make the Chocolate Ganache Frosting
- In a heatproof bowl, add chocolate chips and butter.
- Heat heavy cream until steaming (but not boiling), then pour over the chocolate.
- Let sit for 2-3 minutes, then stir until smooth and glossy.
- Stir in vanilla extract and let cool until thickened but still spreadable. (Speed this up by refrigerating for 15-20 minutes, stirring occasionally!)
Step 4: Assemble the Cake
- Place one cake layer on a plate and spread with a thick layer of ganache.
- Place the second cake layer on top and cover the entire cake with the remaining ganache.
- Smooth with a spatula and let set for 15-30 minutes before slicing.
