Description

Creamy mashed potatoes blended with melted cheese for an indulgent and comforting side dish that’s perfect for holidays or everyday meals.

Ingredients

Units Scale
  • 2 pounds russet or Yukon gold potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup whole milk (more as needed)
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • Salt and black pepper to taste
  • Optional: chopped chives or parsley for garnish

Instructions

  1. Place potatoes in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil.
  2. Reduce heat and simmer for 15–20 minutes or until potatoes are fork-tender. Drain well.
  3. Return potatoes to the pot. Add butter and mash until mostly smooth.
  4. Stir in milk a little at a time until desired consistency is reached.
  5. Mix in shredded cheese and continue mashing until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped chives or parsley if desired and serve hot.

Notes

  • For extra creaminess, use cream cheese or sour cream along with milk.
  • Try different cheeses like Gruyère, Monterey Jack, or Parmesan.
  • Make ahead and reheat gently on the stove or in the microwave with a splash of milk.
