Description

Mashed Cauliflower with Sour Cream is a creamy, low-carb alternative to traditional mashed potatoes, offering rich flavor and smooth texture with fewer calories.

Ingredients

Units Scale
  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon chopped chives or parsley (optional, for garnish)

Instructions

  1. Bring a large pot of water to a boil. Add cauliflower florets and cook for 10-12 minutes or until very tender. Drain well.
  2. In a pan, sauté garlic in butter over medium heat for 1-2 minutes until fragrant.
  3. Add the cooked cauliflower to a food processor or blender. Add the sautéed garlic with butter and sour cream. Blend until smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Transfer to a bowl, garnish with chopped chives or parsley, and serve warm.

Notes

  • Ensure cauliflower is well-drained to avoid watery mash.
  • Use Greek yogurt instead of sour cream for a tangier, higher-protein option.
  • Can be made ahead and reheated gently before serving.
