Ingredients

  • 8 oz pasta (fettuccine, linguine, or spaghetti)
  • 1 lb large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes (chopped, packed in oil)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season shrimp with salt and pepper. Heat olive oil in a large skillet over medium heat.
  3. Sauté shrimp for 1-2 minutes per side until pink and cooked through. Remove and set aside.
  4. In the same skillet, add garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  5. Add sun-dried tomatoes and cook for another minute. Pour in chicken broth and simmer for 2-3 minutes to reduce slightly.
  6. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer until sauce thickens slightly, about 3-4 minutes.
  7. Return cooked shrimp to the skillet and toss to coat. Add the drained pasta and combine everything well.
  8. Garnish with fresh basil or parsley and serve immediately.

  • Use freshly grated Parmesan for a smoother sauce.
  • Adjust spice level by increasing or omitting red pepper flakes.
