Description

Marry Me Salmon is a creamy, luxurious dish that will have everyone coming back for seconds! Pan-seared salmon fillets are simmered in a rich, garlic Parmesan sauce with sun-dried tomatoes and fresh basil, making this a perfect choice for a romantic dinner or special occasion.


Ingredients

  • 4 salmon fillets (about 6 oz each), skin removed
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional, for a bit of heat)
  • 1/4 cup fresh basil, chopped
  • Lemon wedges, for serving

Instructions

  1. Sear the Salmon:
    • Season the salmon fillets with salt and pepper on both sides.
    • In a large skillet over medium-high heat, heat olive oil. Add salmon fillets and cook for 3-4 minutes per side, or until golden and just cooked through. Remove from skillet and set aside.
  2. Make the Sauce:
    • In the same skillet, lower the heat to medium and add minced garlic. Sauté for 1 minute until fragrant.
    • Add the sun-dried tomatoes and cook for another minute.
    • Pour in the heavy cream and add the Parmesan cheese and red pepper flakes, stirring until the sauce is smooth and creamy.
  3. Combine and Simmer:
    • Return the salmon fillets to the skillet, spooning some of the sauce over each fillet.
    • Simmer for 3-4 minutes, or until the salmon is warmed through and the sauce thickens slightly.
  4. Garnish and Serve:
    • Sprinkle the dish with fresh basil and serve with lemon wedges on the side.

Notes

  • For a dairy-free option, substitute heavy cream with coconut cream and omit Parmesan.
  • Serve over pasta, mashed potatoes, or rice to soak up the delicious sauce.
  • Adjust red pepper flakes to taste if you want a bit more spice.
