- 4 salmon fillets (about 6 oz each), skin removed
- Salt and pepper, to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes (optional, for a bit of heat)
- 1/4 cup fresh basil, chopped
- Lemon wedges, for serving
Instructions
- Sear the Salmon:
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet over medium-high heat, heat olive oil. Add salmon fillets and cook for 3-4 minutes per side, or until golden and just cooked through. Remove from skillet and set aside.
- Make the Sauce:
- In the same skillet, lower the heat to medium and add minced garlic. Sauté for 1 minute until fragrant.
- Add the sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream and add the Parmesan cheese and red pepper flakes, stirring until the sauce is smooth and creamy.
- Combine and Simmer:
- Return the salmon fillets to the skillet, spooning some of the sauce over each fillet.
- Simmer for 3-4 minutes, or until the salmon is warmed through and the sauce thickens slightly.
- Garnish and Serve:
- Sprinkle the dish with fresh basil and serve with lemon wedges on the side.

- For a dairy-free option, substitute heavy cream with coconut cream and omit Parmesan.
