Description

Marry Me Chickpeas is a creamy, flavorful vegetarian dish inspired by the viral ‘Marry Me Chicken’ recipe. Made with chickpeas in a rich sun-dried tomato cream sauce, it’s a comforting and satisfying meatless meal.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes (in oil), chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream or coconut cream
  • 1/4 cup grated Parmesan cheese (optional for vegan use)
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in garlic and red pepper flakes, and cook for 1 more minute.
  3. Add sun-dried tomatoes, oregano, and thyme. Cook for another 2 minutes to blend flavors.
  4. Add chickpeas and stir to coat in the mixture.
  5. Pour in vegetable broth and bring to a simmer. Let cook for 5 minutes.
  6. Reduce heat and stir in cream and Parmesan cheese (if using). Simmer for another 5–7 minutes until sauce thickens slightly.
  7. Season with salt and pepper to taste. Garnish with fresh basil and serve warm.

Notes

  • Use coconut cream and skip the Parmesan for a vegan version.
  • Great served over rice, pasta, or with crusty bread.
  • Leftovers store well in the fridge for up to 3 days.
