Description

    • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
    • Salt & pepper, to taste
    • 1 tbsp olive oil
  • Pasta
    • 10 oz penne pasta, cooked al dente
  • Sauce
    • 3 tbsp butter
    • 3 garlic cloves, minced
    • 1/2 cup onion, finely chopped
    • 1 cup sun-dried tomatoes, drained and chopped
    • 2 cups chicken broth
    • 1 cup heavy cream
    • 1 cup grated Parmesan cheese
    • 1 tsp paprika
    • 1 tsp dried Italian seasoning
    • Fresh basil, for garnish

Instructions

  1. Cook Pasta: In a large pot of salted boiling water, cook the pasta until al dente. Drain and set aside.
  2. Prepare Chicken: Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 6-8 minutes until browned and cooked through. Remove and set aside.
  3. Make Sauce: In the same skillet, melt butter. Add onions and garlic, sautéing until softened. Stir in sun-dried tomatoes, chicken broth, and cream, then bring to a simmer.
  4. Finish Sauce: Stir in Parmesan, paprika, and Italian seasoning. Let the sauce thicken for 3-5 minutes, adjusting salt and pepper as needed.
  5. Combine & Serve: Add chicken and pasta to the skillet, tossing to coat in sauce. Garnish with fresh basil and extra Parmesan. Serve immediately.

Notes

Use reserved pasta water to adjust sauce thickness if needed. You can also swap fresh spinach for basil for extra color and flavor.
