Marry Me Chicken Meatballs are tender, juicy chicken meatballs simmered in a creamy sun-dried tomato and garlic parmesan sauce that’s so delicious, it might just inspire a proposal. Perfect over pasta, mashed potatoes, or rice.

- 1 lb ground chicken
- 1/3 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
- For the sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon red pepper flakes (optional)
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, onion powder, salt, and pepper. Mix until just combined. Form into 16–18 small meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned and cooked through, about 8–10 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Stir in red pepper flakes, chicken broth, cream, Parmesan cheese, and Italian seasoning. Simmer for 4–5 minutes until slightly thickened.
- Return meatballs to the skillet and simmer in the sauce for another 5 minutes, spooning sauce over the top.
- Garnish with chopped basil or parsley and serve warm over pasta, rice, or mashed potatoes.
Notes
- Use ground turkey or beef if preferred.
- To make ahead, prepare the meatballs and sauce separately and reheat together before serving.
- Add spinach or mushrooms for extra veggies.
