Ingredients

Scale

For the Chicken and Sauce:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 3/4 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese

For the Ravioli:

  • 1 lb fresh or frozen cheese ravioli
  • Chopped fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the Chicken:

    • Season chicken slices with salt and pepper. In a large skillet over medium heat, heat olive oil. Add the chicken and cook for 5-7 minutes per side, until golden and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the Garlic and Sun-Dried Tomatoes:

    • In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until the garlic is fragrant.
  3. Prepare the Sauce:

    • Add Italian seasoning and red pepper flakes (if using), then pour in the chicken broth. Stir to deglaze the skillet, scraping any browned bits from the bottom.
    • Reduce the heat to medium-low, add the heavy cream, and simmer for 3-4 minutes, until the sauce begins to thicken.
  4. Cook the Ravioli:

    • Meanwhile, cook the ravioli according to package instructions. Drain and set aside.
  5. Combine and Finish:

    • Stir the Parmesan cheese into the sauce until melted. Add the cooked chicken and ravioli, gently tossing to coat in the sauce. Allow everything to warm through for 1-2 minutes.
  6. Serve:

    • Garnish with fresh basil or parsley, if desired. Serve warm and enjoy!

Notes

  • Make Ahead: The sauce can be prepared a day ahead and stored in the refrigerator. Reheat gently and add the chicken and ravioli just before serving.
  • Substitutions: Use tortellini or another stuffed pasta for variety.
