- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/4 cup fresh basil or parsley, chopped (for garnish)
Instructions
Step 1: Sear the Chicken
- Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4–5 minutes per side, until golden brown. Remove from the skillet and set aside.
Step 2: Make the Sauce
- In the same skillet, melt butter over medium heat.
- Add garlic and sun-dried tomatoes, sautéing for 1 minute until fragrant.
- Stir in heavy cream, chicken broth, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes, stirring occasionally.
Step 3: Combine & Simmer
- Return the chicken to the skillet, spooning the sauce over it.
- Simmer for 10 minutes, or until the chicken reaches 165°F (75°C) internally.
