- 4 salmon fillets (about 6 oz each)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
- Optional: lemon wedges for serving
Instructions
- In a small bowl, whisk together olive oil, lemon juice, garlic, parsley, dill, Dijon mustard, salt, and pepper.
- Place salmon fillets in a shallow dish or zip-top bag and pour marinade over them. Ensure all pieces are well coated.
- Cover and refrigerate for at least 30 minutes, up to 2 hours for stronger flavor.
- Preheat oven to 400°F (200°C) or preheat grill to medium-high heat.
- Remove salmon from marinade and place on a baking sheet lined with parchment paper or on the grill.
- Bake for 12-15 minutes or grill for 4-5 minutes per side, until the salmon flakes easily with a fork.
- Serve hot with lemon wedges if desired.
Notes
- Don’t marinate the salmon too long to avoid mushy texture.
- Fresh herbs provide the best flavor but dried can be used in a pinch.
- Can be cooked in an air fryer or stovetop skillet as well.
- Pairs well with rice, roasted veggies, or a fresh salad.
